2022 finalist Belgian vegan awards, category ‘best catering’

I won once more in the Chefsproveggie contest. This year the contest was ‘beat the classics’. A vegan interpretation of a classic dish. I turned the classic scallops into scallops made of king oyster mushroom. Accompanied by lime parsnip cream, grilled green asparagus, decorative flowers and drops of pistou.

I won a prize with my ‘chorizo tofu’ taco in a ‘street food battle  hosted by Chefsproveggie. Chefsproveggie is an organisation ran by professional chefs with partners such as Greenway, Alpro, Ardo, Verstegen, Electrolux,…

I won in the category ‘bomb of flavor’.
This taco has been a success in a lot of private caterings and also during Summer when I ran the kitchen of Bar Bricolage for 2 weeks, the biggest summer bar of Ghent.
